Ingredients for Idli In Coconut Sauce Recipe

  • For Idli:
  • 2 cups idli rice (parboiled)
  • 1 cup urad dal
  • 1 tsp fenugreek seeds
  • Salt to taste
  • For Coconut Sauce:
  • 1 cup coconut , grated
  • 2 green chilies, chopped
  • ½ inch ginger, chopped
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • 8-10 curry leaves
  • 1 tbsp vegetable oil
  • Salt to taste
  • Water, as needed

How to Prepare

1. Prepare the Idli Batter

If you are making idli batter from scratch, soak 1 cup of urad dal (split black gram) and 2 cups of idli rice separately for about 6 hours. Drain the water and grind them separately to a smooth paste. Combine both pastes and let them ferment overnight. You can also use store-bought idli batter for convenience.

2. Steam the Idlis

Grease the idli molds with a little coconut oil. Fill each mold with the prepared idli batter, leaving some space for the idlis to rise. Add water to the steamer, bring it to a boil, and then place the idli molds in the steamer.

Cover and steam for about 10-12 minutes or until a toothpick inserted comes out clean. Once done, remove the molds and let the idlis cool slightly before gently taking them out.

3. Prepare the Coconut Sauce

In a pan, heat the coconut oil over medium heat. Add the mustard seeds and let them splutter. Then, add the curry leaves and slit green chilies, sautéing for about 30 seconds. Next, add the grated ginger and turmeric powder, stirring well.

4. Add Coconut Milk

Pour in the coconut milk and season with salt. Let the sauce simmer on low heat for about 5-7 minutes, allowing the flavors to blend. Stir occasionally to prevent the sauce from sticking to the bottom of the pan.

5. Combine Idlis with Coconut Sauce

Once the coconut sauce is ready, gently add the steamed idlis to the pan, ensuring they are well coated with the sauce. Cook for an additional 2-3 minutes to allow the idlis to absorb the flavors of the sauce.

6. Serve and Garnish

Remove the pan from heat and transfer the idlis to a serving dish. Garnish with freshly chopped coriander leaves for a pop of color and extra flavor. Enjoy this delightful dish hot!
