Ingredients for Kofta Kadhi Recipe
- For the kofta:
- 2 cups lauki (bottle gourd), grated
- 1 cup besan
- 4 green chillies, finely chopped
- 1-inch ginger, finely chopped
- 6-8 garlic cloves, finely chopped
- 1/2 cup coriander leaves, finely chopped
- 1 tsp chilli powder
- 1 tsp saunf (fennel) powder
- 1 tsp coriander (dhania) powder
- 1 tsp chaat masala
- 2 tsp salt
- Oil for deep-frying
- For the kadhi:
- 1 cup besan
- 2 cups dahi (curd)
- 1 tsp haldi (turmeric powder)
- 1 tsp chilli powder
- 1 tsp sugar
- 2 tsp salt
- 4 cups water
- For the tadka:
- 2 Kashmiri chillies, broken
- 1/2 tsp mustard seeds
- 1 tsp cumin seeds
- 2 sprig curry leaves
- 4 garlic cloves, mashed
- 2 tbsp oil
How to Prepare
1. Prepare the Koftas
Start by preparing the kofta mixture. In a mixing bowl, combine grated vegetables of your choice (like potatoes, paneer, or cabbage), green chilies, ginger, cumin seeds, salt, and chopped coriander leaves.
Add besan (gram flour) and a pinch of baking soda to the mixture, and mix until a thick batter forms.
Shape small portions of the batter into round balls or koftas. Heat oil in a deep frying pan, and carefully drop the koftas into the hot oil. Fry them until they turn golden brown and crispy.
Once fried, drain the excess oil using a kitchen towel and set the koftas aside.
2. Make the Kadhi Base
Next, it’s time to prepare the kadhi. In a bowl, whisk together yogurt and besan (gram flour) until smooth and lump-free.
Add turmeric, red chili powder, and salt, and mix well. In a deep pan, heat ghee or oil and add cumin seeds, mustard seeds, and a pinch of asafoetida.
Let them splutter before adding ginger-garlic paste and curry leaves. saute for a few minutes until fragrant.
Now, slowly pour in the yogurt mixture, stirring constantly to avoid curdling.
Add water as needed to achieve a thin, gravy-like consistency. Cook on a low flame for 10-15 minutes, allowing the flavors to blend.
3. Combine the Koftas and Kadhi
Once the kadhi is cooked and reaches a smooth consistency, gently add the fried koftas to the simmering kadhi.
Stir carefully to coat the koftas with the kadhi without breaking them. Allow the koftas to soak in the kadhi for a few minutes, so they absorb the flavors.
You can garnish the dish with a sprinkle of fresh coriander leaves. Serve the kofta kadhi hot with steamed rice or roti for a satisfying meal.
