Ingredients of Rangeela Barfi
- 2 Cups Milk powder
- 1 cup Milk
- 1/2 cup Sugar
- 1/2 cup Ghee
- Each of 3-4 food colouring options
- Almond shavings (for garnish)
- Extra ghee/ oil for greasing
How to Prepare
- Melt ghee in a pan over medium heat, then add milk and stir.
- Lower the heat and slowly add milk powder in small quantities, stirring continuously.
- Add sugar and stir until it dissolves completely.
- Once the mixture thickens and starts to leave the sides of the pan, add cardamom powder and mix well.
- Remove the pan from heat and transfer the mixture into a bowl.
- Divide the mixture into four bowls (or as many as you wish for different colors).
- In each bowl, mix your desired food coloring, keeping one bowl plain for a white layer if you like.
- Grease a rectangular tray or container with ghee or oil, or line it with baking paper.
- Start layering the mixtures, spreading one color at a time with a spatula.
- Repeat until all the layers are added.
- Cut the layered barfi into small squares using a knife.
- Gently lift the pieces and place them on a plate, garnishing with almond shavings.
