Chicken Kothu Parotta Recipe Ingredients

  • 3-4 parottas
  • 1 big onion, finely chopped
  • 1 big tomato, finely chopped
  • 4 Green Chillies, finely chopped
  • 1 cup leftover chicken curry
  • 1/2 cup shredded chicken
  • 2 eggs
  • 1/2 tsp pepper
  • 1 tsp chilli powder
  • 2 sprigs of curry leaves
  • 1/4 cup coriander leaves
  • Salt to taste
  • 2 tbsp oil (preferably coconut)

How to Prepare

  1. Roast the parotta in ghee until golden brown on both sides. Shred it and set aside.
  2. Whisk the eggs in a bowl with salt and pepper.
  3. Heat oil in a thick-bottomed kadhai and Saute onions, torn curry leaves, tomato, and green chilies for 2 minutes.
  4. Add chili powder, followed by the shredded parotta pieces, and mix using a chopping motion.
  5. Pour in the chicken curry and add the shredded chicken. Mix well.
  6. Add the whisked eggs and stir until fully cooked. Adjust salt and spices to taste.
  7. Garnish with fresh coriander leaves and serve hot.
