Ingredients of Coconut poli
- 250 gms jaggery
- 250 gram fresh coconut, grated
- 1 tsp cardamoms powder
- 1/4 tsp nutmeg powder
- For The Poli -Outer Covering
- 300 gram whole wheat flour
- 5 tbsp oil or ghee (clarified butter)
- 5-6 tbsp beetroot puree
- 1 tsp Haldi powder
- 1 tbsp spinach puree
- water as required to knead the dough
- oil or ghee as required for roasting the coconut poli
How to Prepare
Coconut Stuffing for Poli:
- Cook the Chana Dal: In a pressure cooker, cook the soaked chana dal for 6-7 whistles until it’s well cooked. Strain the dal and set it aside.
- Prepare the Coconut Filling: In a pan, heat ghee on low flame. Add jaggery and grated fresh coconut. Sauté until the jaggery melts completely. Add ground nutmeg and cardamom powder, then fry for a few seconds on low heat. Let the mixture cool down.
Preparing the Poli Dough:
- Knead the Dough: Take whole wheat flour in a bowl. Add ghee and a little water. Begin kneading, adding water as needed to form a smooth, soft dough.
- Add Natural Colors: Divide the dough into three parts. Mix one part with beetroot puree, another with turmeric (haldi) powder, and the third with spinach puree. Cover the dough and set it aside until ready to use.
Making coconut Poli
- Take a small ball from each of the three colored doughs you’ve prepared. Layer the three doughs together without mixing them into one. Roll the dough out to a 2-3 inch circle on a banana leaf.
- Place a portion of the coconut mixture in the center of the rolled dough. Bring the edges together to seal the filling, then gently roll it again to flatten.
- Heat a tawa over medium heat and spread some ghee. Place the rolled poli on the tawa. Once one side browns, flip it and cook the other side. Apply more ghee as needed.
- Stack the cooked polis in a casserole or wrap them in a kitchen napkin to keep warm.
- Serve your coconut poli with a drizzle of ghee and enjoy!
