Ingredients of Palak Paneer Lifafa
- 2 Cups atta (or whole wheat flour)
- 2 tsp corn flour
- 250 gram paneer (cottage cheese), grated
- 2 cups palak (spinach), washed and finely chopped
- 2 tbsp grated cheese (optional)
- 1/2 tsp jeera (cumin seeds)
- 1/2 tsp chaat masala
- 1 tsp garam masala
- 1 tsp chilli powder
- 4 green chillies, finely chopped
- 1 onion, finely chopped
- Salt to taste
- Ghee and oil as required
How to Prepare
- Prepare the Dough: Mix atta (whole wheat flour) with salt and ghee. Slowly add water while kneading to form a soft dough. Cover and let it rest for 30 minutes.
- Prepare the Filling: Heat oil in a pan, add cumin seeds, then Saute chopped onions and chillies. Once onions turn translucent, add chopped spinach and cook until dry. Let the mixture cool.
- Mix the Stuffing: In a large bowl, mix grated paneer with masalas, then add the spinach mixture. Combine well, add cheese, and adjust the salt. Make sure the stuffing is dry.
- Shape and Cook: Knead the dough again, divide into small balls, and roll them into flat discs. Lightly roast each disc on both sides on a tawa.
- Assemble the Lifafa: Place the semi-cooked paratha on a flat surface, add a spoonful of stuffing in the center. Fold two opposite sides over the filling, overlapping slightly. Seal the edges using a paste made from cornflour and water.
- Cook the Lifafa: Fold and seal the remaining sides to form an envelope shape. Cook the lifafa paratha on both sides on a tawa, using ghee or oil, until golden brown.
- Serve: Enjoy hot with chutney, or cut into triangles and serve as starters.
