Ingredients for Coconut and Dink Ladoo Recipe

  • 6 ghee
  • 100 gram gond / dinka / edible gum / anutu
  • 2 tbsp cashew / kaju, chopped
  • 2 tbsp almonds / badam, chopped
  • 2 tbsp raisins / kishmish
  • 1½ cup dry coconut / kopra,
  • 2 tbsp poppy seeds / khus khus
  • ¾ cup dry khajur / chuara / dry dates, seedless
  • ¼ tsp cardamom powder / elachi powder
  • ¼ tsp nutmeg powder / jaiphal powder
  • 1 cup jaggery / gud
  • 2 tbsp water

How to Prepare

1. Roast the Edible Gum (Ding)

Begin by heating a tablespoon of ghee in a heavy-bottomed pan over medium heat. Once the ghee is hot, add the edible gum (ding) in small batches and roast them.

You will notice that the ding puffs up and turns light and crispy as it roasts. Remove the roasted ding from the pan and set it aside to cool. Once cooled, crush the ding into small pieces using a mortar and pestle.

2. Toast the Coconut

In the same pan, add the freshly grated coconut and dry roast it on low heat. Stir continuously to prevent the coconut from burning.

Roast the coconut for 4-5 minutes until it becomes slightly golden and fragrant. Be careful not to over-roast the coconut as it can become too dry. Once done, transfer the roasted coconut to a plate and set it aside.

3. Prepare the Jaggery Syrup

Next, take a saucepan and add the grated or powdered jaggery along with ¼ cup of water. Heat the mixture on low to medium heat and stir until the jaggery melts completely.

Once the jaggery has dissolved, strain the syrup through a sieve to remove any impurities.

Pour the clean jaggery syrup back into the pan and continue cooking it until it reaches a sticky consistency (soft ball stage).

To check, drop a small amount of syrup into cold water; it should form a soft, pliable ball.

4. Mix Everything Together

Once the jaggery syrup is ready, quickly add the roasted coconut, crushed ding, and chopped nuts (if using) into the syrup.

Stir everything together until the ingredients are evenly coated with the jaggery syrup.

Sprinkle in the cardamom powder for extra flavor. Stir well and remove the pan from the heat.

5. Shape the Ladoos

Let the mixture cool slightly but not completely, as it will harden.

While the mixture is still warm, grease your hands with a little ghee and take small portions of the mixture to shape into round ladoos.

Gently press and roll the mixture in your palms to form even-sized balls.

Let the ladoos cool completely before serving. Once cooled, store them in an airtight container.

These laddoos can last for up to a week at room temperature.
