Ingredients for Curry Leaves Thogayal Recipe
- 3 cups Fresh curry leaves
- 1/2 cup Grated coconut
- 2 tsp Oil
- 1 tsp Urad dal
- 1 tbsp Bengal gram
- 1/4 tsp Mustard seeds
- 2 Garlic cloves
- 1-inch Ginger
- Pinch of asafoetida
- 2 Dry red chillies
- 2 Green chillies
- 1 tsp Tamarind
- 1 tsp Sugar or jaggery
- Salt to taste
- Water, as requried
How to Prepare
1. Wash the curry leaves, drain the water and allow to dry.
2. In a pan, heat oil and add the mustard seeds, Bengal gram, urad dal and asafoetida.
3. Add the dry red chillies, followed by the curry leaves. Saute for a minute.
4. Now, add in the ginger, garlic and green chillies. Saute for another minute and then turn off the heat.
5. Once the sauteed mixture cools, add it to a mixer/ grinder. Also add tamarind, grated coconut, sugar/ jaggery and salt to taste.
6. Grind along with a little water to form a coarse paste. Store this chutney in an airtight container kept in a cool and dry place.
