Ingredients of Chettinad Chicken Biryani

  1. 2 Cups rice
  2. 400 gram chicken
  3. 2 onions, sliced
  4. 2 tomatoes, chopped
  5. 2 slit green chillies
  6. 3 garlic cloves, minced
  7. 1/4 cup dahi
  8. 2 tbsp ghee
  9. 1-inch piece of ginger
  10. 1 tsp haldi
  11. 1 tsp red chilli powder
  12. 1 tsp saunf
  13. 3 cloves
  14. 3 cardamom pods
  15. 1 tsp coriander powder
  16. 2 tbsp oil
  17. Salt to taste
  18. A handful of coriander leaves
  19. 1 tsp ginger-garlic paste
  20. 1/2 Cup yogurt
  21. 1 tsp haldi
  22. 1 tsp red chilli powder
  23. Salt to taste

How to Prepare

  1. Rinse the rice thoroughly and soak it in water for 20-30 minutes. Drain and set aside.
  2. In a bowl, marinate the chicken with ginger-garlic paste, yogurt, turmeric, red chili powder, and salt. Mix well and let it rest for at least one hour.
  3. Heat ghee in a heavy-bottomed pan. Add fennel seeds, cloves, cinnamon sticks, and cardamom. Saute well. Add onions, ginger, and garlic, and cook until the onions turn golden brown.
  4. Add the marinated chicken pieces and cook for a few minutes. Then, add chopped tomatoes, green chilies, red chili powder, and turmeric. Stir well.
  5. Pour in the yogurt and sprinkle with coriander leaves. Mix everything together and cook for 4-5 minutes.
  6. Layer the chicken masala with cooked rice and top with fried onions, cashew nuts, and raisins. Cover and cook for 15-20 minutes. Garnish with fresh coriander leaves and serve hot.
