Ingredients of Chettinad Chicken Biryani
- 2 Cups rice
- 400 gram chicken
- 2 onions, sliced
- 2 tomatoes, chopped
- 2 slit green chillies
- 3 garlic cloves, minced
- 1/4 cup dahi
- 2 tbsp ghee
- 1-inch piece of ginger
- 1 tsp haldi
- 1 tsp red chilli powder
- 1 tsp saunf
- 3 cloves
- 3 cardamom pods
- 1 tsp coriander powder
- 2 tbsp oil
- Salt to taste
- A handful of coriander leaves
- 1 tsp ginger-garlic paste
- 1/2 Cup yogurt
- 1 tsp haldi
- 1 tsp red chilli powder
- Salt to taste
How to Prepare
- Rinse the rice thoroughly and soak it in water for 20-30 minutes. Drain and set aside.
- In a bowl, marinate the chicken with ginger-garlic paste, yogurt, turmeric, red chili powder, and salt. Mix well and let it rest for at least one hour.
- Heat ghee in a heavy-bottomed pan. Add fennel seeds, cloves, cinnamon sticks, and cardamom. Saute well. Add onions, ginger, and garlic, and cook until the onions turn golden brown.
- Add the marinated chicken pieces and cook for a few minutes. Then, add chopped tomatoes, green chilies, red chili powder, and turmeric. Stir well.
- Pour in the yogurt and sprinkle with coriander leaves. Mix everything together and cook for 4-5 minutes.
- Layer the chicken masala with cooked rice and top with fried onions, cashew nuts, and raisins. Cover and cook for 15-20 minutes. Garnish with fresh coriander leaves and serve hot.
