Ingredients of Urad Dal Kadhi

  1. 1 Cups Urad Dal
  2. 1 cups Dahi (curd)
  3. ½ inch Ginger
  4. 2 cloves Garlic
  5. 2 Green Chillies
  6. 2 cups Water
  7. 1/2 tsp Sugar
  8. to taste Salt
  9. Mustard oil for frying
  10. For the tadka:
  11. 1 tbsp Mustard oil
  12. 8 curry leaves
  13. ¼ tsp Mustard seeds
  14. ¼ tsp Jeera (cumin seeds)
  15. 3 cloves Garlic
  16. 1 big Dry red chilli/ Kashmiri chilli
  17. ¼ tsp Haldi (turmeric powder)
  18. ¼ tsp chilli powder
  19. ¼ tsp Hing (Asafoetida)

How to Prepare

  1. Soak and Blend: Soak urad dal for 3-4 hours. Drain the water and transfer the dal into a mixer. Add ginger, garlic, and green chilies, then blend into a thick, coarse batter.
  2. Fry Pakoras: Make small balls from the mixture and fry them in mustard oil until golden. Set aside.
  3. Prepare Dahi Mixture: In a bowl, churn dahi with 1 cup of water to create a lassi-like consistency. Add sugar and salt to taste. Mix 1 tbsp of the leftover batter into the dahi mixture.
  4. Prepare Tadka: Heat mustard oil in a kadhai on low flame. Add tadka spices, including broken red chili, and fry until the garlic turns light brown.
  5. Cook the Kadhi: Slowly pour the dahi mixture into the kadhai. Add 1 cup of water and stir over medium heat. Once the kadhi boils, add the pakoras and cook for 4-5 minutes.
  6. Garnish and Serve: Garnish with fresh coriander and serve hot with jeera rice.
