  6. 1/2 cup toor dal
  7. 3 cups spinach (palak), finely chopped

  11. 2 tsp coconut oil
  12. 1 tsp mustard seeds
  13. 2 tsp split urad dal
  14. whole red chillies

How to Prepare

  1. Cook the dal: In a pressure cooker, combine 1-2 cups of water and ½ tsp turmeric powder with the dal. Cook for 3-4 whistles until the dal turns soft and mushy.

  3. Prepare the seasoning: In a pan, heat oil, add urad dal and whole red chillies. Stir until golden, then turn off the heat.
  4. Grind the spices: Let the mixture cool, then transfer it to a grinder. Add grated coconut, cumin seeds, and water as needed. Blend until smooth.
  5. Cook the spinach: In a pan, add chopped spinach leaves, ½ cup water, and a pinch of salt. Cook for a few minutes until softened.
  6. Blend the spinach: Once cooled, blend the spinach to a smooth puree.
  7. Mix everything: Pour the spinach puree into a kadhai, add the mashed dal, and the ground mixture. Stir well and season with salt.
  8. Simmer: Bring the mixture to a boil, then let it simmer for a few minutes.
  9. Make the tempering: Heat coconut oil, add mustard seeds, split urad dal, and whole red chillies.
