Haryali Subz Pulao Recipe Ingredients
For the haryali puree:
- 1 cup mint leaves
- 1 cup coriander leaves
- 1 cup spinach
- 2-3 green chilies
For the Pulao
- 1 cup onions , finely chopped
- 2 potatoes , chopped
- 3-4 pieces sliced ginger
- 2 cup cooked basmati rice
- 3-4 ghee and oil
- Spices – 3-4 elaichi
- 2 cloves
- 1 bay leaf
- 2-3 cinnamon sticks
- 1 cup peas
- 1 cup cauliflower
- 3 cups water
- Salt to taste
How to Prepare
- Boil rice until soft, strain the water, and set the rice aside.
- Make a paste using mint, coriander, chilies, and spinach.
- Boil peas and set them aside.
- In a pan, heat oil and add whole spices. Add chopped vegetables and boiled peas. Pour in some water and cook for 10 minutes.
- Add the green paste to the vegetables and cook until combined.
- Season with salt and mix well.
- Once the paste and vegetables are fully cooked, add the cooked rice.
- Gently mix everything together and set it aside.
- Add a little ghee and serve the rice hot.
