  • 1/4 cup Urad Dal
  • 1/4 tsp Fenugreek Seeds
  • 1/2 tsp mustard seeds
  • 6-7 curry leaves
  • to taste salt
  • 1 tbsp oil
  • 1 medium Onion, finely chopped
  • 2 green chillis, finely chopped
  • 1 tbsp Coriander Leaves, finely chopped

How to Prepare

1. Soak and Grind the Ingredients

Start by rinsing the idli rice and urad dal separately. Soak the idli rice in enough water for about 4-6 hours, and soak the urad dal for about 2-4 hours. After soaking, drain the water and grind the rice and dal together to a smooth batter, adding a little water as needed. The batter should be thick yet pourable.

2. Ferment the Batter

Transfer the ground batter to a large bowl and add salt. Mix well. Cover the bowl with a lid or cloth and let it ferment in a warm place for about 8-12 hours. The batter will rise and become slightly airy, which is essential for making fluffy paniyarams.
